I don’t think it really approximates what wind would look like except for some fairly specific cases (very low-poly solid volume representing the bulk of the foliage, as in the demo). Could be useful in some situations. You need to play around to make the wind look natural.
Looking to convert your mesh to low poly then, directx 11 poly shader is the answer. The asset does not require direct x 11 support only, geometry shader support. Generally, while converting a smooth shader to flat shader there is an increase in number of vertices and this leads to more GPU loads. Directx 11 shader solves this problem. You can limit the vertices numbers and there is no increase in the vertices count thus keeping the performance intact. There is no mesh limitation, it works on all type of meshes in Unity.
